Recipe Variations 1 Matcha mochi cake: Add in 2 tablespoons of matcha powder to the dry ingredients. 2 Lemon mochi cake: Add 1 box of lemon pudding mix to the dry ingredients. 3 Chocolate mochi cake: Add 1/4 cup cocoa powder to the dry ingredients, then fold in a 1/2 cup of chocolate chips into the batter.
Lining the baking pan with parchment paper will prevent the mochi cake from sticking to the pan. I used an 8”x8” baking pan, but y ou can double the recipe and use a 9”x13” baking pan. Make sure there are no lumps in the batter before baking. If there are bubbles on the surface, simply pop them out with a toothpick.
Preheat the oven to 375 degrees. Using a muffin pan, Spray each cup with mct oil or grease each tin with a light amount of ghee. Fill each cup with one layer of small mochi balls. It should be enough to cover the bottom of one of the cups. Brush the tops of the mochi with oil or ghee. Place in the oven for 25 – 35 minutes.
