Haupia is made out of four key ingredients: coconut milk, sugar, cornstarch, and water. The coconut milk is the base, sugar gives sweetness, cornstarch makes it thick, and water balances everything out. Mix cornstarch and water first (more cornstarch makes a firmer haupia, and less cornstarch makes a more pudding-y haupia).
MAKE HAUPIA FILLING: In a small bowl, mix together the sugar, salt, cornstarch and water. Set aside. In a saucepan, heat the coconut milk. When hot, add the sugar mixture. Cook, stirring constantly, until the mixture thickens. Remove from heat. Stir in vanilla and cool.
Hawaiian Haupia. Combine the sugar, cornstarch and water in a saucepan and whisk to combine. Add the coconut milk and vanilla and stir again. Cook over medium low heat until thickened. This will take between 10-15 minutes. The mixture should be thick enough to pull away from the pan. Pour into an 8" square pan and cover with lid or saran wrap.
* adjust the cornstarch according to how firm you want the haupia to be. I preferred it just barely slice-able and more pudding-like as pictured however, my boys loved it a bit more firm like jello. Combine the sugar, cornstarch and water in a saucepan and whisk to combine.
