1. Combine first 2 ingredients in a medium bowl. Cover and let stand at room temperature at least 4 hours or overnight.
2. Stir together apricot mixture, sugar, and next 3 ingredients in a 6-qt. stainless steel or enameled Dutch oven. Bring mixture to a full rolling boil that cannot be stirred down, over high heat, stirring frequently.
3. Add pectin, immediately squeezing entire contents from pouch. Continue hard boil for 1 minute, stirring constantly. Remove from heat. Skim foam, if necessary.
4. Ladle hot jelly into a hot jar, leaving 1⁄4-inch headspace. Wipe jar rim. Center lid on jar. Apply band, and adjust to fingertip-tight. Place jar in boiling-water canner. Repeat until all jars are filled.

1. Preheat oven to 350°F.
2. Using a sifter over a large bowl, sift together the 2 flours. Stir in the sugar. Add flour/sugar mix to a food processor and pulse briefly to combine. Add the softened butter to the food processor and pulse to combine.
3. Add the whole egg plus the egg yolk to the food processor, along with the almond extract, salt and lemon zest (or the lemon thyme) and pulse until everything is combined. This is the frangipane.
4. Grease the bottom of the tart pan with a little butter and spread the frangipane along the bottom.

2. Cook them on a stove on a high heat and stir for 10 - 20 minutes or until water disappears.
3. When all the water is gone, blend apricots with immersion blender and continue to cook on a low heat with stirring until jam is thick enough. It's thick enough when forms thick droplets that hang heavily off the utensil. Or if you make a line in the middle of the jam with utensil it stays like that.
4. When thick enough you can add sweetener to taste, 1 TBS of lemon juice and 1 TBS of grass fed gelatin. This is optional and you don't have to use any of optional ingredients.
