2. Drain the beans, and then add them back to the saucepan. Cover them with cold water (ice water, if you like). After 5 minutes, drain again, and you will be able to easily remove the outer skins.
3. Add the olive oil, onion and garlic to a large skillet, and saute until fragrant, about 3 to 5 minutes.
4. Add the beans, thyme, mint, lemon juice and zest, salt and pepper to taste, and continue to saute for 2 minutes.
