Rating: 4.5/5(635)
Estimated Reading Time: 7 minsCategory: AppetizerTotal Time: 1 hr1. Into a large pan, add the tentacles of the octopus, along with the red wine vinegar, the wine and bay leaves and bring to the boil. Boil with the lid on, on medium low heat, for 40-60 minutes. Do not add any water, because the octopus, will shrink and emit enough water. Be careful not to add any salt, as the octopus is salty enough and not to over-boil it, because it will get mushy. When cooked nicely, the octopus should be crunchy.
2. When done, remove the octopus from the pan and keep the juices into a bowl.
3. Into a very hot pan, add the octopus, without the juices, and color nicely for 1 minute. This will allow the octopus to get crispy on the outside.
4. Add the sliced onions and chopped tomatoes into the pan, along with 1-2 tbsps of olive oil and the garlic and stir. Let it cook for about 5 minutes, stirring every now and again, until the onions caramelize.

How do you eat octopus in greece?

The usual way of having octopus in Greece is roasted/grilled, served with vinegar and olive oil, accompanied by a glass of ouzo with ice! It's consumed in large quantities during the summer and the period before Easter (fasting), but it's also served all year long.

What goes well with baby octopus?

Oregano: It goes well with octopus, but you could sub it for your favorite herb. Salt and pepper: To enhance flavor. Grape tomatoes and parsley/cilantro: These are optional, but they complement this dish well. I tried to keep things simple for this baby octopus recipe, but you'll need a pressure cooker to tenderize it faster.

Can you eat baby octopus without the head?

No. baby octopus is just the marketing name for the adult octopus of a few species that don't grow much. Should I remove the head? You can eat with or without the head. In my case, I cooked them with their heads, but I removed them when I transferred them to the serving plate because some people don't like to see the head.
