1. First, prepare your workstation by getting three large plates with higher sides. Put the flour on the first plate, crack the eggs and whisk them with a fork until uniform in color on the second plate, and add the breadcrumbs to the third plate.
2. If there is excess fat on the meat, trim it.
3. Place one pork chop between two pieces of cling wrap (or put it in a freezer bag) and pound it with the flat side of a meat hammer until thin. You'll be surprised how large relatively small pieces of meat can get. At the same time, be careful since you don't want to pound holes into your meat.
4. Add salt and pepper to both sides of the pork chop, then set it aside. Pound and salt/pepper the rest of the meat.

1. With a meat tenderizer or the bottom of a heavy pan, pound out the pork chops to 1/4 inch thickness.
2. Add the flour to a shallow bowl. In another bowl, whisk the eggs with the milk, and season with the salt and pepper. Add the panko to another shallow bowl.
3. One at a time, lightly dredge the pork chops first in the flour, then the egg mixture, and then in the panko crumbs, shaking off excess. Repeat with the remaining pork chops.
4. Heat 2 tablespoons of oil in a heavy skillet over medium high heat. Fry the chops in batches, moving the chops in the pan, until golden brown and crispy, about 5 minutes on each side. Add 1 tablespoons of oil to the pan at a time and repeat with the remaining pork chops. Serve with lemon wedges, noodles, and sweet and sour cabbage.

1. Trim any visible fat from chops and slice each down the center, lengthwise on the seam. Pound the chops until thin. In a medium bowl combine crunchy bread crumbs, 1 teaspoon black pepper, 1/2 teaspoon garlic powder and 1/2 teaspoon paprika...set aside.
2. Whisk together egg, buttermilk, salt, 1 teaspoon black pepper, 1/2 teaspoon paprika and 1/2 teaspoon garlic powder. Add pork chop to egg mixture, cover, place in the refrigerator and marinate for 1 hour.
3. Spread bread crumbs on a cookie sheet. Remove chops from egg mixture, allow excess to drip off, add to bread crumbs and thoroughly coat both sides. Lightly spray the bottom and lower sides of the slow cooker with nonstick cooking spray. Also, lightly spray both sides of pork chops with cooking spray.
4. If a rack is available, place in the slow cooker and arrange chops on top, or place directly in the slow cooker if a rack isn't available. Cover, cook on high 3 hours or low 6 hours on low, or until pork is cooked through and reaches an internal temperature of 145 degrees. There is no need to turn Schnitzel during cooking time.
