Transfer the cookies to the cookie sheet for baking. You should have equal amounts of cookies with holes in the center to cookies without holes in the center. Bake the cookies for 10-12 minutes or until they begin to turn golden.
4. To assemble the cookie sandwiches. Allow the cookies to fully cool on a rack. Place about a half of a tablespoon (or as needed) of the jam on the cookies without the hole in the center. Dust with sugar free powdered sugar and serve.
