1. Preheat oven to 350°F. In a medium sized bowl, combine dry ingredients (oats, baking soda, cinnamon, and sea salt). Mix.
2. In another bowl, combine 2 eggs, lightly beaten, maple syrup, vanilla extract and milk. I used whole milk but you can use whatever you have on hand. Whisk together and add to your dry ingredients.
3. Add the wet ingredients to the dry ingredients and mix using a spoon or spatula. Fold the blueberries into the batter taking care to be gentle (no blueberry smushing here, we want these intact!).
4. Grease a 9x9 baking pan. Pour in the oatmeal mixture and spread evenly.

2. In a large bowl combine flour, oats, maple syrup, baking powder, baking soda and salt. Pour in the melted coconut oil and mix (this prevents it from hardening when mixed with the cold items).
3. In a small bowl whisk together the eggs, milk, yogurt, lemon zest and vanilla until blended. Add it to the dry mixture and quickly blend it together. Fold in the blueberries and let it set for 5 minutes to allow the oats to soak and flavors to blend.
4. Scoop the batter into the muffin cups until each is full. Bake for 20-22 minutes or until the tops are golden and a toothpick inserted comes out clean. Remove muffins from the pan and transfer to a cooling rack to cool.
