1. Begin to bring a large pot of salted water to a boil. Position rack in hottest area of oven and preheat oven to 425°F/220°C. Coat the inside of a 3-quart (2.8 L) casserole dish (or a 13 by 9-inch/33 cm by 23 cm casserole dish) with nonstick spray.
2. For the Vegetable Filling: Meanwhile, heat Garlic-Infused Oil in a large sauté pan over medium heat until shimmering, then add scallions. Sauté for a couple of minutes until softened, then add mushrooms, kale and zucchini and continue to sauté until vegetables are crisp tender. Season well to taste with salt and pepper. Use a silicone spatula to scrape into a large mixing bowl; no need to wash the pan.
3. As soon as the pot of water comes to a boil (hopefully you can multi-task a bit here) add the potatoes, carrots and parsnips and boil until crisp tender, probably about 8 minutes. Drain well when done and add to the large mixing bowl with other veggies.
4. Going back to the wiped-out sauté skillet, melt the vegan “butter” spread over medium heat, then whisk in the flour and cook for about 1 minute or until the flour begins to color. Whisk in the vegetable broth, almond milk, miso and thyme and cook, whisking often, until thickened and smooth. Scrape over the vegetables, add the parsley, and fold everything together to combine well. Taste and season as desired. Scrape into prepared pan.

Cook the chicken until a golden-brown crust has formed on both sides and the chicken is cooked through, about 10 minutes. Remove to a plate and repeat with the remaining chicken. Set aside.
2. Add the remaining garlic-infused oil to the pan along with the carrots, celery, and bell pepper. Sauté the vegetables, scraping up any brown bits from the bottom of the pan, until soft, about 5 minutes. Season them with 1/2 teaspoon sea salt and the red pepper flakes.
3. Pour in the red wine and simmer until reduced by at least half, 2 minutes. Add the olives and tomato sauce, stirring to combine. Carefully return the chicken to the skillet and nestle it in the sauce, making sure it’s fully coated. Tuck the herbs in between the chicken thighs. Simmer over medium-low heat until the sauce has thickened and the chicken is fork tender, 10 to 15 minutes. Garnish with the parsley and serve the chicken cacciatore directly from the skillet alongside gluten-free pasta or quinoa.

1. Add coconut oil to a small heat-resistant bowl or measuring cup and heat in the microwave until just melted (about 35 seconds). Set aside to cool until just about room temperature.
2. While the coconut oil is cooling, in a large mixing bowl, whisk together maple syrup, vanilla extract, apple cider vinegar, all-spice, cinnamon, ginger, and salt until well mixed. Add almond flour, carrots, pecans, and hemp seeds and gently stir with a spoon until combined. Lastly, add coconut oil and stir until the mixture is thoroughly dampened with oil and a dough forms.
3. Line a large, airtight container with parchment paper. Using your hands, roll dough into 2 tbsp balls and place in the container. Refrigerate for a minimum of 3 hours (preferably overnight).
4. After the balls have chilled for at least 3 hours, remove from the refrigerator. If the balls have flattened on one side, re-form into balls with your hands if needed. If using it, add shredded coconut to a small bowl and roll ball in coconut until evenly covered.

1. In a medium sized bowl, mix together the carrots, spring onion greens, spices, coriander, flour, whisked eggs and salt. Stir until combined.
2. Heat 1 tbs olive oil in a medium-large sized fry pan on medium heat. Use a dessert spoon to scoop out the mixture into balls and place into the pan. Push down with the back of the spoon to flatten the balls into patties. This will need to be done in batches. Fry until golden - approximately 2-3 minutes on each side.
3. Once fritters are cooked, place on a plate lined with paper towel to absorb the excess oil.
4. Repeat step 2 for the next batch of fritters. Place the first batch of fritters in the oven at a low temperature if you wish to keep them warm while the second batch is cooking.
