1. To begin, preheat your oven to 300 and line a baking pan with parchment paper.
2. In a large mixing bowl, add your dry ingredients (oats, nuts, cinnamon) and stir them together.
3. In a small, microwave safe bowl, add your coconut oil and microwave till melted (about 1 minute). Add your honey, whisk them together, and microwave them again till they are very warm (about another 30-60 seconds). Add your vanilla and whisk it it.
4. Pour your wet ingredients over your dry ingredients, and stir till all of your oats and nuts are covered entirely. Pour your granola onto your pan and spread it out into one, thin, even layer. Bake in the oven for 25-30 minutes, or till the edges are just starting to gain a bit of color. The granola will get crunchy as it cools.

1. Place a rack in the center of your oven, and preheat to 350 degrees F. For the easiest clean up, line a large, rimmed baking sheet with parchment paper.
2. In a large mixing bowl, combine the oats, nuts, flaxseed, salt, cinnamon, and pumpkin pie spice. Stir to combine.
3. Pour in the maple syrup, oil, whisked egg white, and vanilla (do not add any of the coconut, dried fruit, or chocolate chips yet). Stir well until every part of the mixture is lightly moistened. Pour the granola onto the prepared baking sheet. With a large spoon or the back of a rubber spatula, spread it in an even layer, and lightly press it down.
4. Bake for 12 minutes, then remove the pan from the oven. Stir in the coconut flakes. With the back of your spatula, spread the granola back into an even layer, and lightly press it down. Return to the oven, and bake 10 to 12 additional minutes, until it is very lightly golden and smells irresistible.

1. Preheat the oven to 325°F. Line a large baking sheet with parchment paper or greased foil. Set aside for later.
2. Add all ingredients to a large bowl. Using a rubber spatula, fold until clusters form and mixture is well mixed.
3. Pour onto the prepared baking sheet. Using the spatula, gently nudge granola into an even layer. Separate granola into small piles to create clusters. Make space between clusters to allow for air to flow through and crisp up the granola.
4. Bake for 20 minutes. Using a heatproof spatula, gently flip granola, making sure to keep clusters intact. Bake for an additional 5-15 minutes, until edges are a deep golden brown and granola is just slightly soft. Mine took a total of 30 minutes. Granola will crisp up while cooling.
