By adding the egg replacer to my dairy-free option, these are gluten-free vegan chocolate chip cookies as well. So, if you also need to be egg-free or are vegan, you too can enjoy these cookies! These gluten-free cookies are so easy to make.
Add the gluten-free flour, baking soda, baking powder, and salt to the butter mixture and mix until fully combined. Either stir in the chocolate chips with a spoon or use your mixer on low to mix the chocolate chips into the cookie batter. Drop by rounded tablespoon or use a greased cookie scoop. (I used a 1 ½ tablespoon cookie scoop).
In a large mixing bowl combine the almond butter, melted coconut oil, maple syrup, egg, and vanilla extract. Whisk until completely homogenous, about 1 minute. Add the almond meal, baking soda, and salt and stir until just combined. Fold in the chocolate chips.
