2. In a large non-stick pan, add the shredded coconut and toast on medium-low heat until coconut is slightly golden (but not burnt).
3. Add the toasted coconut, pitted dates, and salt into a food processor (I use this one). Pulse until the mixture comes together and starts to form a ball.
4. Take 1 tbsp of dough and roll it into a ball, then flatten to make a round cookie. Using a small round cookie cutter or a large metal straw, poke a hole in the middle to create the Samoas shape.
