So a giardiniera recipe for canning needs to be simply pickled vegetables in vinegar and seasonings, rather than a marinated vegetable in a mixture of oil and vinegar. We’re not straying far from the traditional version though, because that is how they make their giardiniera in Northern Italy. They just used vinegar, like this recipe below.
This recipe for canning giardiniera uses no oil, so it is the perfect way to preserve your summer produce. What Is Giardiniera? Giardiniera (pronounced JAR-di-NAIR-ah) is a traditional Italian antipasto dish made up of pickled vegetables.
The pickling liquid to make giardiniera can take many forms. This recipe uses a mix of red pepper flakes, jalapeños, sugar, and salt so it is spicy and sweet. Some versions have oil in them, but I prefer to drizzle in oil into the jars or over the vegetables after canning and after I open the jars to eat.
You can keep the Giardiniera in the refrigerator for up to four months. If you plan to “can” the Giardiniera, you will need to blanch the fresh produce in salty water before adding to the jars. Then the use classic canning method of boiling the jars for 10 minutes to seal.
