Of course, you'll find some of my own frozen treats on our list, like my Homemade Pineapple Ice Cream and the healthy copycat Disney Pineapple Whip. You can use frozen pineapple to make everything from sorbet and ice pops to cake and smoothies. Frozen pineapple is a great way to add a healthy and refreshing fruit to so many recipes.
Place a piece of wax paper onto a baking sheet and spread the pineapple chunks (or slices) in an even layer on the covered baking sheet. Make sure the pieces do not touch each other to prevent them from sticking together. Place the baking sheet in the freezer until the pineapple chunks are frozen.
Frozen pineapple does, however, make a great snack or addition to fruit salad and smoothies. Once thawed, pineapple will have a similar texture to the canned product but is still suitable for use in baking, cooked dishes, smoothies, fruit salad, and stir-fry. Only freeze fully ripe pineapple.
And yes, pineapples aren’t exact the ideal choice for a ‘keto’ or ‘low carb’ fruit, but given the very innocent amount we’re using to make all these cookies, we think it’s ok to enjoy in moderation. But to each their own and if it doesn’t fit your macro plan or philosophy, feel free to skip!
