DirectionsStep1Preheat oven to 325 degrees and line a baking sheet with parchment paper.Step2To a large bowl combine the flour, sugar, baking soda, salt, and pumpkin pie spice. Mix well.Step3In a separate bowl combine the pumpkin puree, water.     3. Add dry ingredients to wet ingredients and mix until combined. Use a cookie scoop (about 1 1/2 tablespoons dough) to drop mounds onto a lightly greased cookie sheet leaving about 2-3 inches between each cookie dough mound. Use the palm of your hand to slightly flatten each mound (press down about 1/2 inch to flatten the top a little bit).
    4. Bake at 350 degrees for 12-15 minutes. Allow to cool on the pan for about 5 minutes, then transfer to a cooling rack to cool completely.
