1. Mix flour, sugar, baking powder, salt and cinnamon in a large bowl with a whisk. Set aside. In a small bowl combine milk, eggs, vanilla, butter and beat with whisk. Combine two bowls pouring the smaller into the larger and mixing well
2. Peel, core, and cut up apples and fold into the batter. Pour enough oil into skillet to make about 1/4 inch. Heat oil and drop spoonfuls of batter into hot oil. (I use an ice cream scoop). Cook until brown on one side, flip and continue frying until both sides are good and brown.
3. Remove and drain on paper towels. Makes about 1 1/2 dozen fritters depending on what size you make them.
