2. Transfer the mixture to a small sauce pan. Cook over medium heat for 3 to 5 minutes, whisking or stirring constantly. When you see some bubbling and know the mixture has reached boiling temperature, remove from heat and pour into ramekins or a small bowl. Refrigerate until ready to use. It will be set and ready to use in about 30 minutes.

3. Add cheese into hot skillet and let cook for 1-2 minutes or until a golden-brown crust has formed on the cheese. Flip cheese over and repeat.
4. Remove cheese from pan and place on a paper-towel-lined plate to absorb the excess oil.
