Very nice tart, but somewhat lacking in flavor contrast. I would sub 1 teaspoon lemon extract for the almond and vanilla extracts in the filling and add 1t lemon peel to the apple slices. Quite simply, this is a perfect recipe. The apple-almond combination is delicious, the preparation is simple, and the presentation is beautiful.
This low carb apple almond tart might be the best thing that happens to you this Fall. I’ve already made this twice this week and had to cut it up into pieces and freeze it, or I might eat all of it. I did discover from this that it comes out of the freezer and heats up beautifully.
Drain apples; overlap in concentric circles atop filling. Melt 2 tablespoons butter; brush over apples. Sprinkle with 1 tablespoon sugar. Bake tart 15 minutes. Reduce temperature to 350°F. Bake until apples are tender, about 45 minutes.
I personally liked the almond paste--essentially a marzipan--but others found the flavor from the almond extract overpowering. Also, an important note: put your tart pan on a rimmed baking tray to avoid getting apple juice burned to the bottom of your oven!
