Category: DessertCuisine: AmericanTotal Time: 10 mins1. Using a large mixing bowl, add the eggs, creamy peanut butter, coconut sugar, and vanilla extract. Stir together until combined using a rubber spatula or beat together using an electric mixer.
2. Once combined, add the oats, baking soda, cinnamon and salt and mix well. Then add the chocolate chips and mix well until combined.
3. To chill the dough, cover the bowl with plastic wrap and refrigerate for at least 3 hours, or up to 4 days, before baking.
4. Once chilled, preheat oven to 350°F and line a large baking sheet with a silpat mat or parchment paper. Scoop a heaping tablespoon of dough on prepared baking sheet to form about two-tablespoon mounds. Place at least 2 inches apart. Bake for 8-10 minutes or until edges are set. It's okay if slightly underbaked and glossy in the center.

Ratings: 222Category: DessertCuisine: AmericanTotal Time: 12 mins1. Preheat the oven to 180C/350F. Line a large baking tray with parchment paper and set aside. Alternatively, use two baking trays, to avoid cookies from overspreading.
2. In a large mixing bowl, add your coconut sugar, white sugar, coconut oil, applesauce and vanilla extract, and mix until fully combined. Then, add your flour, baking soda, and salt, and mix well. Finally, fold through your oats and chocolate chips, until just combined. Do not overmix. Refrigerate the dough for 30 minutes.
3. Remove the dough from the refrigerator. Using a cookie scoop or large spoon, drop balls of cookie dough onto the lined trays, about 2 inches apart.
4. Bake the cookies for 15-17 minutes, or until just beginning to go golden brown around the sides. Remove from the oven and let cool on the tray for 10 minutes, before transferring to a wire rack to cool completely.
