1. First, preheat the oven to 350ºF and spray a 9×13-inch baking dish with cooking spray.
2. Add oats, peanut butter, maple syrup, melted butter, eggs, brown sugar, and baking soda to a large bowl and mix with a wooden spoon to combine. The batter should be thick like cookie dough.
3. Then, add in M&M’s and chocolate chips. Mix again.
4. Transfer dough into the baking dish and use your wooden spoon (or hands) to press the batter firmly into the dish.

Stir together until combined using a rubber spatula, whisk or wooden spoon.Once combined, add the oats and baking soda and mix well. Then add the M&Ms and chocolate chips and mix well until combined. Dough will be thick and grainy from the sugar.
3. Scoop the dough into the prepared baking sheet and spread the dough evenly to the corners of the pan. Bake in the preheated oven for 18-22 minutes.
4. Start checking at 18 minutes to avoid over-browning. Remove from the oven and allow the cookie bars to cool all the way in the pan before cutting.
