1. Combine 3/4 cup flour, sugar, dry yeast and salt in a large mixer bowl and stir until blended.
2. Combine milk, water and butter in a small microwave-safe bowl or measuring cup. Microwave on HIGH in 15 second increments until very warm but not hot to the touch (120° to 130°F). Test the water temperature with an instant read thermometer, if you have one. Note: butter won’t melt completely.
3. Add wet ingredients to flour mixture.
4. Without a mixer: stir mixture with a wooden spoon until you can’t stir anymore, adding just enough flour (about 1 – 1 1/2 cups more) so the dough will come to a ball, getting your hands in there once you can’t stir anymore.

1. In the bowl of your stand mixer fitted with the paddle attachment combine 2 cups flour, sugar, undissolved yeast and salt. Mix on low until combined.
2. In a microwave-safe bowl heat the milk, water, and 1/4 cup butter in 30 seconds increments until very warm to the touch (120°F to 130°F). Butter might not be melted all the way, which is ok.
3. Pour the milk mixture into the flour mixture. Mix on medium speed for 2 minutes, scraping the sides of the bowl as necessary.
4. Add in the egg and 1/2 cup flour and mix for 2 minutes at high speed. Stir in enough remaining flour to make a soft dough. Dough should form a ball and be slightly sticky. Knead on a lightly floured surface until smooth and elastic, about 8 to 10 minutes, or alternately, you can do this step in your mixer with a dough hook.
