1. Put all ingredients into a large pot over medium heat.
2. Stir to prevent initial fruit scalding. The berries will soon begin heating and bursting, and there will soon be plenty of fluid to prevent the fruit from scalding. (*If using frozen berries, add some water to the pot before cooking to prevent scald, since it will take a while for the frozen berries to thaw.)
3. Bring to low boil and let it continue at a low boil with no lid for 30-60 minutes, stirring occasionally.
4. After the mixture has reduced about 50% from its initial level, remove from heat and let it sit until it's cooled enough not to burn you when touched.

1. You will need to remove the berries from the stems; elderberry stems are toxic. (I go through some tricks on destemming elderberries here.) It should take you about 45 minutes to an hour to destem 3 pounds of elderberries, which equates to about a half a normal paper grocery bag.
2. At this point you can empty your berries into a large bowl of ice water. Weird debris will float, like dead flower husks, bugs, etc. Pour this off.
3. Pour the elderberries into a large pot and either mash them thoroughly with a potato masher, or, better yet, with an immersion blender. Only break up the berries for a few seconds using the immersion blender, and use it on low setting. You don't want to grind up the seeds, which are bitter.
4. Bring the elderberries to a boil, stirring often. Now, if you are using a food mill, set it up with its finest plate and pour the elderberries into it. Run the food mill until the mash is pretty dry, then squeeze out any remaining elderberry juice. You should have a little more than 1 quart. Pour the juice through your finest mesh sieve to catch any stray seeds or pulp.

WEBSep 2, 2020 · Elderberry syrup can be frozen for later use in freezer safe containers. I recommend adults take 1-2 tablespoons of elderberry

1. If you are using fresh elderberries, discard as many stems and unripe berries as possible.
2. Put six cups of fresh black or blue elderberries (or three cups dried) into a large pot with six cups of water.
3. Bring it to a boil over medium heat, then lower the heat and simmer the elderberries uncovered for about one hour, or until reduced by nearly half. If you feel like it is reducing a bit too fast, you can partially cover the pot while it is simmering.
4. Remove the pot from the heat and set aside to cool to warm room temperature for at least 30 minutes.
