This Ham and Spinach Egg Bake is a big hit at our house. It comes together in minutes and is packed with protein. Not to mention, it will make you strong like Popeye. This dish is naturally gluten-free, and the swiss cheese is optional, so you can easily make it dairy-free, paleo, whole30 if that’s your desire.
Pour into a big bowl and mix with the chopped ham, chopped spinach and shredded cheese. (Frozen spinach would make it watery.) Spray a pie plate baking dish with cooking spray and then pour the mixture in. Sprinkle the remaining cheese over the entire quiche.
Stir the ham mixture into the spinach mix and stir to combine. Transfer to a small casserole dish (I used a 7x11 pan) and sprinkle remaining cheddar and mozzarella cheeses on top. Bake 25-30 minutes or until the casserole has browned on top.
