1. Preheat oven to 200°C (390°F) or 180°C (360°F) for fan-forced ovens. Line and grease a square 20cm (8 in) tin with nonstick baking paper, make sure the paper hangs over the tin as you'll use this to lift the slice out.
2. In a bowl mix the flour, sugar and coconut. Pour in the melted butter and combine the mixture until the dry ingredients are no longer visible.
3. Transfer the base mixture into the prepared tin. Use a spatula or the back of a spoon and push the mixture down so it spreads evenly inside the tin. Bake the base for 15 minutes.
4. Whilst the base is baking, finely zest and juice the lemon. Cut the passionfruits in half and remove the pulp, discard any clumpy bits. In a bowl whisk together the condensed milk, salt, zest and 2 tbsp of lemon juice until combined.

2. Line a tray (19 x 29cm) with baking paper then pour in biscuit mixture, push to edges and press down with your hands. Smooth with the back of a metal spoon. Chill in refrigerator while you make the icing.
3. Add icing sugar, butter and passionfruit pulp to a bowl, stir then whisk until smooth.
4. Pour icing over chilled base and smooth to the edges. Return to refrigerator until icing has set. (About 1 hour)
