2. Add the filling ingredients, except passion fruit and coconut to a food processor and blend to smooth. Add passion fruit and mix well to combine. Pour into the base (you can strain the seeds if you like through a sieve, I didn't because CBF).
3. Bake for 15 mins then remove and sprinkle with the desiccated coconut. Return to oven for another 15 mins until coconut is golden. Allow to cool to room temperature before popping into the fridge to set for 4 hrs before slicing.
