1. Thoroughly clean squid pieces under cold water, running water through tubes. Dab dry. The tips might have a jelly-like tendon that will need to be cut off and discarded. Cut tubes into 1/2 inch rings. Rinse tentacles and leave whole. Set in refrigerator to dry out further.
2. In a medium bowl combine panko bread crumbs with a few dashes of fine sea salt and a couple turns of a freshly ground pepper.
3. In another medium bowl whisk together egg whites and flour to make a paste.
4. Preheat oven to "warm", 150-200 degrees. Line a baking sheet with paper towels.

3. Carefully add the squid to the oil and fry until crisp and very pale golden, about 3 minutes per batch. Using tongs or a slotted spoon, transfer the fried calamari to a paper-towel lined plate to drain. You may have to do this in several batches and add oil in between batches, as necessary. Do your best to maintain an oil temp around 350 degrees F.
4. Place the fried calamari and lemon wedges on a clean plate. Sprinkle with salt and pepper. Serve with the marinara sauce.
