3. Add the courgette, peas, feta and mint and gently mix it in to form a batter.
4. Heat some oil in a pan and then add spoonfuls of batter to make fritters around 10cm (4 inch) in diameter. Fry for 2 minutes each side.

4. Sprinkle with shredded cheese, cover and cook until cheese has melted. Garnish with green onion and cilantro. Serve hot on its own; or with quinoa or brown rice.
