1. Preheat oven to 375 degrees F. Line a baking sheet with parchment paper and set aside. In a large mixing bowl, combine flour, baking powder, salt and yogurt. Mix until dough forms. Turn out onto a lightly floured work surface and knead until soft and no longer sticky (1-2 minutes).
2. Divide dough into 6 equal portions. Roll each portion into a rope using your hands and cinch ends together to form a bagel. Place onto the prepared baking sheet. Brush the egg wash over the tops of the bagels and top with desired toppings. Bake in the preheated oven for 15-20 minutes, or until golden brown.

2. Using a dough scraper or knife, divide the dough into four equal pieces. Lightly flour your working surface. (I HIGHLY recommend using a Silpat mat for this.)
3. Working with one piece of dough at a time, roll the dough on the mat in a back and forth motion until you have a rope about 9” in length.
4. Place the dough onto a baking sheet (I use these USA baking sheets) and shape into a bagel, wrapping each end over the other and tucking the ends underneath the bagel.
