1. Preheat oven to 375 degrees F and prepare your pie crust and place it on a rimmed cookie sheet and set aside.
2. Peel and slice your apples into 1/4-inch slices and then slice them in half and add to a large bowl.
3. Add the remaining filling ingredients to the bowl with the apples and toss to coat. Transfer the apple filling mixture to the prepared pie crust and gently work the apples so they're nestled together without too many large air gaps. Apples will likely still overflow the crust, this is okay.
4. Prepare the topping by mixing the ingredients together in a small bowl until crumbly. Sprinkle the topping mixture over the apple mixture. Use aluminum foil to create a dome over the top of the pie, make sure it's not touching the pie itself.
