Category: DessertAuthor: The KitchenDifficulty: Easy1. For the stovetop method: Remove the label from the can of sweetened condensed milk. Place 3 to 4 forks upside down on the bottom of a large 6- to 8-quart pot. Place the unopened can on top of the forks and cover with water by a few inches. (The forks help to prevent a vacuum between the bottom of the can and the pot.) Place the pot over high heat until it reaches a simmer, then lower the heat to medium-low or low to maintain a steady simmer for about 3 hours. Add more water to the pot if necessary to ensure that the can is submerged at all times. Let the can cool to room temperature in the water before removing. Open the can and scoop out the contents. The dulce de leche should be dark and caramelized.
2. For the oven method: Preheat the oven to 425 degrees F. Place a shallow baking dish in a roasting pan. Pour the sweetened condensed milk into the baking dish and cover the dish with foil. Transfer the roasting pan to the oven and add enough hot water to reach halfway up the sides of the baking dish. Bake until the dulce de leche is dark and caramelized, 60 to 75 minutes, checking the water level occasionally and adding more if needed. Let cool, then whisk until smooth.
3. Transfer the dulce de leche to an airtight container, put plastic wrap directly on the surface and refrigerate for up to 2 weeks.

Reviews: 13Category: DessertCuisine: MexicanTotal Time: 20 mins1. Microwave: Recipe tested ina 1200 Watt Microwave: Pour sweetened condensed milk in a deep microwave-safebowl, set cooking power to 50% (or medium), and cook for about 4 minutes. Remove bowl from microwave and stir well. It will be hot!
2. Reduce cooking power to 30% (or medium-low) and cook for about 12-16 minutes, or until thick.Whisk well until creamy. If too thick, whisk in just enough heavy cream toloosen. Mine was quite thick and a little bit grainy. But it tasted good! Thiswas my husband's favorite one in terms of flavor.
3. Pressure cooker/Instant Pot: Place rack inthe pressure cooker, and then the can of sweetened condensed milk, laid on itsside on top of the rack. Pour in enough water to cover can by 1-2 inches above.Secure lid, turn on pressure cooker and seal valve. Set to thecanning function or manual high pressure for 30 minutes (lighter color)or 40 minutes (darker color).
4. Quick-release the pressure using tongs (so you won't burn your fingers) and once the pressure is all let out, carefully remove the lid. Let the water cool completely before removing can so that it won't explode in your hands. I set mine for 40 minutes, which produced a darker and creamier result than the one made in the microwave. The flavor was good, although not my favorite of the three.

Frequently Asked Questions

How do you make dulce de leche on a keto diet?

Add the evaporated milk, heavy cream or whipping cream, vanilla extract and the keto sweetener you prefer (xylitol or allulose) to the pan, and place it over medium-high heat to bring it to a boil. Stir as the mixture gently boils, or vigorously simmers. It will slowly thicken, and reach the condensed milk stage before turning into dulce de leche.

Is dulce de leche low carb?

Dulce de leche is a delicious confection that's very common across Latin America. While delicious, traditional dulce de leche is made with sweet condensed milk which is full of sugar, so it's a no-no for anyone following a healthy low-carb diet. My dulce de leche is different!

How do you thicken dulce de leche?

Bring water to a boil; reduce heat to low. Simmer milk in the can for 3 to 4 hours. Milk will slowly turn light to medium brown and become thicker as it cooks. Add more water as it boils down. Remove lid from can and pour dulce de leche into a bowl. Whisk to break up any lumps and mix thicker caramel from the bottom into the rest of the syrup.

What is the difference between dulce de leche and caramel?

Dulce de leche has milk and sugar, or sweetened condensed milk as its base. In contrast, caramel is the result of a reduction of water and sugar with the addition of butter and heavy whipping cream. Moreover, it has a thicker and creamier consistency than caramel, although both are brown and sweet.
