1. Preheat oven to 350F Put cookie sheet in refrigerator to chill.
2. Cream the butter and cream cheese together until well blended. Add in the sugar, egg yolk, and vanilla (or almond extract ) beating until light and fluffy.
3. Whisk together the flour, salt, and cardamom and slowly add it to the wet mixture, blending just until all the flour is incorporated. Don't over beat.
4. Fill your cookie press with dough, and press out onto a cold cookie sheet. Sprinkle with colored sugar or small sprinkles if desired.
