Once it's soft, strain away the fruit and whole spices, then discard. Now, over low heat, stir in sweetener until it dissolves.
The only truly "essential" spices are whole cinnamon sticks. We used eight cinnamon sticks, but we love a lot of cinnamon flavor. Some of our favorite additions are fresh ginger, cloves, nutmeg, allspice and star anise. If you don't like or don't have any of the spices or aromatics for this low carb apple cider, don't worry.
All the spices can be combined in a tea ball, or tied up in a layer of cheesecloth. Steep the spices in the apple cider for 30 minutes. Remove the spices before serving. For a cinnamon sugar garnish, wet the rim of the mug with an orange wedge. Dip the rim into a mixture of cinnamon and sugar.
Bring to a simmer (do not boil). Reduce heat and simmer, uncovered, 20 minutes. Remove spice bag. To serve, ladle hot cider into 6-oz. mugs. If desired, add 1 to 2 oz. Calvados to each serving. Top with nutmeg and apple slices. Prepare as directed in a 4-qt. slow cooker. Cover and cook on low 2 to 3 hours. Remove spice bag and serve as directed.
