1. Beat butter and cream cheese in bowl of electric mixer until light. Beat in the flour and cream, alternating the flour and cream, until well mixed. The dough will be very soft. Divide into 4 portions and wrap in plastic wrap. Refrigerate overnight.
2. Preheat oven to 350º and have ungreased cookie sheets ready.
3. Sprinkle work surface and rolling pin with powdered sugar. Roll out dough portion to about ¼-inch thickness. The dough is really hard to roll at first but then gets easier. If it tears a little in spots, just pinch it back together. Use a small round cutter (2-inch diameter) to cut out cookies and place on baking sheet, about 1 - 2 inches apart.
4. Make a small depression in the center of each with your fingertip. I used, and prefer, the bottom of a shot glass which I dipped in powdered sugar so it wouldn't stick. Works better for me than with my fingertip. Fill cookies scantily with jam, jelly, preserves, cheese or nut filling. If you use too much filling, it will run out onto the baking sheet.

1. Sift the flour into a large bowl (my grandma would always use this white, metal, enameled bowl). Make a well, crumble the yeast in it, add about 100 ml lukewarm milk and a tablespoon of sugar. Let the yeast grow for about 15 minutes. Make sure the milk is neither cold nor hot. Cold milk prevents the yeast from growing and hot milk kills the yeast. Alternatively, you can make the starter in a separate bowl by mixing the milk, yeast, sugar and a bit of flour and add it to the flour later with the rest of the ingredients. I like to make it all in one bowl.
2. Once the yeast is bubbly, add the rest of the milk mixed with the yolks, melted butter, oil, rum, and salt. Mix with a wooden spoon into smooth dough. Leave the spoon in the bowl, sprinkle dough with a little flour, cover with a clean kitchen towel and let rise for 30 minutes in a warm place.
3. Prepare your fillings according to the instructions bellow.
4. Knead the dough a few times to get some air in. Let it rise for another 30 minutes. It should double in size and become soft. When you touch it, it should spring back.
