Heat the ghee in a pressure cooker, add the carrots and sauté on a medium flame for 5 minutes. Add ¾ cup of milk and dates, mix well and pressure cook for 2 whistles. Allow the steam to escape before opening the lid.
Put milk and carrots in a heavy saucepan. Boil till thick, stirring occasionally. Once it starts thickening, stir continuously. Add sugar and cook further till thickens. Add ghee, elaichi, saffron and colour.
To make low-fat gajar halwa, heat the ghee in a pressure cooker. Ghee imparts a wonderful flavor to the gajar halwa. When the ghee melts, add the carrots. Sauté on a medium flame for 5 minutes, while stirring occasionally.
Peel and grate carrots. Put milk and carrots in a heavy saucepan. Boil till thick, stirring occasionally. Once it starts thickening, stir continuously. Add sugar and cook further till thickens. Add ghee, elaichi, saffron and colour. Stir on low heat till the mixture collects in a soft ball or the ghee oozes out.
