1. In a hot skillet over medium-high heat, add the olive oil and shredded pork. Allow to sear for 2 minutes and then add the resered carnitas juices to the pan. Saute for 3-5 minutes or until the juices are evaporated and the bottom of the pork is browned.
2. Meanwhile, spray all of the corn tortillas with a light mist of oil or non-stick cooking spray. In a separate large skillet over high heat, cook the tortillas for 1 minute on each side, or until lightly browned. Set aside on a covered plate to keep warm.
3. When the tortillas and meat are done cooking, top each tortilla with 1/4 cup Carnitas, 2 Tablespoons guacamole, 2 Tablespoons pico de gallo and 1 Tablespoon queso fresco.
4. Serve the tacos with lime wedges and salsa on the side. (I love salsa verde!)
