3. While Champagne is simmering, cut lobster tails in half lengthwise using a very sharp chef's knife or kitchen shears and remove the vein.
4. Reduce heat on Champagne to low and add 2 Tbsp butter and whisk vigorously until it's completely melted. This creates a butter/Champagne emulsion. Repeat the process with the remainder of the butter until it's all incorporated into the sauce. This is similar to the classic French beurre monté sauce, but made with Champagne instead of water.

3. Shuck the lobster tails by cutting up the middle of the inside with a kitchen scissors, and then gently prying the meat from the shell with your fingers. This is slow work, so allow for enough time (and patience) to get it done without compromising the lobster meat.
4. Thread a wooden or metal skewer through the lobster tail meat to keep it from curling while cooking. If your wooden skewer is too long, you can shorten it by breaking or cutting it to the right size.
