Almond flour helps thicken the brownies while not taking away from their rich flavour. We use 1 cup because almond flour is much less absorbent than traditional white flour. The cocoa powder is of course there to add chocolate flavour. Quality matters. I really enjoy using the Costco Rodelle cocoa powder as I find it has a nicer flavour.
