1. Place a rack in the center of your oven and heat to 350 degrees F. Line an 8x8-inch baking pan with parchment paper so that the paper overhangs two sides and spray with nonstick cooking spray.
2. In a food processor or high powered blender, process 1 1/2 cups of oats, flax seeds, and almonds into a flour.
3. Combine your processed flour, remaining cup of oats, banana, mapel syrup, and water into a bowl. Stir together unitl everything is combined and crumbly. Press a little more than half of the mixture into an 8x8 inch pan lined with parchment paper, then set the rest of the crumble in the fridge for later.
4. Pour blueberries into a bowl and use a fork to mash and break down the blueberries just a bit. Stir in the lemon zest and starch of your choice and spread over oat crust.

1. Preheat oven to 350 degrees then spray an 8x8" baking pan with nonstick spray and set aside.
2. Add 1 cup old fashioned oats to a food processor or blender then process until oats have turned into flour. Set aside. (Alternatively you could use a scant cup oat flour.)
3. Add milk, mashed banana, honey, coconut oil, egg, and vanilla to a large bowl then whisk to combine. (Coconut oil might solidify a bit but it's fine and the oil will melt right back down in the oven.) Add remaining 1-1/2 cups oats, oat flour, cinnamon, baking powder, and salt then stir to combine. Fold in blueberries then pour batter into prepared baking pan.
4. Bake for 35-40 minutes or until the edges are golden brown and the center has set. Cool before slicing into bars then store in the refrigerator, or individually wrap bars in saran wrap and freeze.
