Add in salt, and extracts and pulse until a loose ball of dough forms. Add a splash of water if it needs help blending. (the longer your blend, the smoother they get, but I like mine to keep a little texture)
2. Use a small cookie scoop or 1 Tbs measuring spoon to scoop out balls. Roll smooth in your hands. (Wet your hands if it's too sticky)
3. Optional: roll in a small bowl of almond flour.
4. Chill or freeze for a few minutes to firm up, if desired, Enjoy!
