1. Preheat oven to 450 F. Bake poblano peppers for 10 minutes, then flip and cook another 10 minutes.
2. Meanwhile, make the sauce. Add olive oil to a large pot, then add onions, green pepper and garlic, sauteeing for 2-3 minutes until softened. Add the rest of the ingredients, bringing to a boil then simmer for 10 minutes. Blend with an immersion blender then keep sauce warm on low until ready to serve.
3. Remove peppers from oven then slice down the middle as seen in the video below. Gently scrape out the seeds and membranes using a spoon, then fill with cheese. Bake another 10 minutes until cheese is melted.
4. Remove peppers from oven, then top with sauce and a little bit more cheese if desired. Garnish with cilantro, lime wedges and avocado slices (all optional but yummy!) Serve with Mexican rice or other choice of side if desired.

2. Slice each pepper lengthwise, removing the stem. Cut the pepperjack cheese into 8 equal chunks and then stuff a chunk into each pepper. (I cut them to make them fit lengthwise.) Place in a greased casserole. I use a small lasagna pan.
3. Beat the eggs, cream and salt until blended, then pour over the peppers.
4. Top with the cheddar cheese.

1. Chiles Rellenos: Place a skillet over a medium-high heat. Add oil to warm and add the ground meat to cook breaking down the lumps that form. About 5 minutes. Add the onion and garlic until slightly translucent. Add the carrots and keep cooking for about 5 more minutes. After that time add the potatoes to cook stirring frequently.
2. While the meat and vegetables are cooking, place the tomatoes and water in the blender process to form a puree. Add this tomato puree to the skillet and stir in the rest of the ingredients. Simmer until vegetables are cook and liquid has reduced and very little remains. In case the liquid has reduced before the vegetables are cooked add some more water during the cooking process. Cool before stuffing the peppers.
3. Once your peppers are clean and seed removed dry them with a paper towel. Gather all your ingredients for the final preparation.
4. Stuff the pepper using a spoon being careful not to overstuff or the fill will spill while frying it.
