2. In a deep skillet or medium pot, egg-poaching liquid to a boil over high heat, then leave on low heat.
3. Heat a large (12-inch) skillet over medium-high heat, cook bacon until fat renders and meat is slightly crisp, about 10 minutes. Set aside with a slotted spoon and transfer to a plate, leaving the fat in the skillet.
4. At the same time, add the pasta to the salted water, and add the broth to the bacon fat and simmer the broth to reduce by 1/3, about 8 to 10 minutes.

1. Add eggs, cheese and garlic powder to a medium bowl and whisk until combined. Set aside.
2. Add bacon to a large skillet or pan and place over medium heat, cook bacon on both sides until golden brown. If the pan starts to smoke at any point, simply lower the heat. I always cook my bacon on medium to medium low heat.
3. Once bacon is done, blot with a paper towel to absorb excess grease, then chop into bite sized pieces and set aside. There shouldn’t be any bacon grease in the pan unless you used regular pork bacon. If you used regular bacon, drain bacon grease from pan, leaving only about 1-3 teaspoons grease in the pan. You’ll be using this pan for the pasta so remove it from the heat and the hot burner and set on aside on the stovetop.
4. While the bacon is cooking, place a large pot of water over high heat and add in a generous amount of salt. Once the water boils, stir in the angel hair pasta and cook until al dente, about 6-8 minutes.

1. Bring a large pot of water to a boil. Add the spaghetti and cook until al dente according to the package directions. Before draining, reserve about ½ cup of the pasta water. (Just scoop it out with a coffee mug; it doesn’t need to be precise and the mug’s handle makes it safer to dip.)
2. Meanwhile, in a large skillet, cook the bacon over medium heat to your desired crispness. Crumble the bacon. Pour off all but 1 teaspoon of the bacon grease from the skillet. Return the bacon to the pan.
3. Add the kale and peas and cook for 5 minutes, stirring often, until the kale wilts and the peas thaw and warm up. Add the garlic, then remove the skillet from the heat and let cool for 3 to 5 minutes.
4. Now comes the tricky part: Add the hot pasta to the skillet, then add the beaten egg and very quickly mix together. If you’re not quick, you’ll get scrambled eggs and not sauce. If this happens, don’t fret . . . just mix very well and most of the lumps will dissolve. Add ¼ cup of the reserved pasta water and mix well. Add more pasta water if needed to thin out the sauce.
