These are literally apple fritters in cookie form. They came out exactly as I'd hoped! A super soft cookie with apple chunks throughout, plenty of cinnamon sugar and a delicious simple vanilla glaze to top them off. A perfect keto fall recipe.
Each apple fritter cookie has 2 NET carbs and just 100 calories. The cookies are a good size too! I ended up making the servings for this recipe 12 (and calculating the nutrition based on 12 cookies) but I actually got 13 in total myself.
