1. Rub salt and pepper, as desired, on all sides of pork roast. If you don't want to use salt here, use onion, garlic or chili powder, or any combination. A garlic pepper blend would make a nice rub for the roast.
2. Note: Prepare the sauce while the roast is cooking and place in refrigerator for later. Place chiles, tomato, onion and garlic cloves in saucepan. Add enough water to cover. Place on stove top on medium heat for about 20 minutes, until vegetables are softened.
3. You will only need about 1 1/2 cups sauce for the shredded pork. Start mixing about one cup sauce with the pork and add only enough to make it nicely coated but not dripping. Any leftover sauce can be used as a serving sauce or to flavor the masa.
4. Whisk together masa harina, baking powder and seasonings.

1. Preheat oven to 375 F degrees. Lightly coat a 13" x 9" (or slightly smaller) casserole dish with non-stick cooking spray.
2. In a large skillet over medium-high heat, brown ground beef with onion and green bell pepper. Cook until beef is no longer pink and then drain off as much grease from the pan as possible. Stir in garlic, tomatoes, tomato sauce, corn, olives, salt, chili powder, cumin, crushed red pepper and black pepper and bring to a low boil. Reduce heat to medium-low and simmer for 5 minutes. Stir in 1 cup shredded cheddar cheese and simmer till melted. Transfer to prepared dish.
3. In a large saucepan over medium heat, warm milk, 1 tablespoon sugar, 1/2 teaspoon salt and 2 tablespoons butter, until butter has melted. Reduce heat to low and stir in cornmeal, a little at a time, stirring vigorously with each addition until smooth and thickened. Remove from heat and stir in cheese. Slowly drizzle in the beaten eggs, stirring vigorously until combined. Pour cornmeal mixture over meat mixture, smoothing out evenly over the surface.
4. Bake at 375 degrees for 30 to 40 minutes until golden brown and bubbly around the edges. Remove from oven and allow to cool for 5 to 10 minutes. Serve with sour cream.

4. Assemble: Remove 1/2 cup of the masa batter and stir it into the filling then transfer the filling into prepared pan and spread into an even layer. Transfer the remaining masa batter to the 9x13 and evenly spread over the filling. Bake for 30-40 minutes. Note that the topping may not look cooked so make sure to check it anyway with a toothpick; tamale pie is done when a toothpick inserted into the center of the masa topping comes out clean. Serve warm with sour cream, salsa, hot sauce, tomatoes, avocados, etc.
