Being Cuban, our household often served yellow rice. It's traditional to garnish yellow rice with pimentos, but I don't like them so I don't. Serve yellow rice with Cuban-style roast pork, or add cooked chicken pieces while cooking the rice to make Arroz con Pollo. Place the rice in a sieve and rinse under cold water until the water runs clear.
Cuban beans and rice, not to be confused with Puerto Rican or any other beans and rice, is easy and authentic and, thanks to black beans and bacon, results in something that’s definitely more than the sum of its parts. Beans and rice is a staple dish in many cultures. But it’s something sorta special in Cuba, where it goes by the name congri.
Instructions In a heavy medium sized pot, heat oil on medium heat. Add onions, peppers and garlic and saute until soft, about 4-5 minutes. Add rice, beans, water, cumin, bay leaf, oregano and salt and pepper. Simmer on medium-low heat, stirring occasionally, until the rice absorbs most of the water and just barely skims the top of the rice.
Place rice in a large saucepan with a tightly fitting lid and add water. Stir in the onion, salt, annatto powder, paprika, and pepper. Bring the mixture to a boil over medium-high heat. Reduce heat to low, cover pan, and simmer.
