1. 1 Preheat oven to 150°C. Line a baking tray with baking paper.
2. 2 In a large bowl, beat egg whites with an electric beater until soft peaks form. When ready, you should be able to hold the bowl upside down without the mix falling out. Beat in sugar, ¼ cup at a time, until mix is glossy and thick.
3. 3 With a large metal spoon, gently fold through vinegar, cornflour and vanilla.
4. 4 Spoon mix onto prepared baking tray, forming one large 20cm round pile or three smaller even ones, leaving enough room for the mix to spread a little. Place in the oven and reduce heat to 120°C. Cook for around 1 hour 10 minutes, until crisp on the outside. Turn oven off and leave pav in the oven to cool for 2 hours or overnight, with door slightly ajar. Decorate with yoghurt and berries and serve.

1. Make the Pavlova: Preheat the oven to 250 degrees F. Line a baking sheet with parchment paper and draw a 9-inch circle in the middle (I traced 8-inch parchment rounds, but you could cake pans or anything else about the same diameter). Spray lightly with non-stick cooking spray.
2. Using an electric mixer with the whisk attachment, beat the egg whites on medium speed until frothy, then add the cream of tartar. Increase the mixer speed to medium-high and beat to soft peaks. While continuing to beat the egg whites, gradually add the granulated sugar (I estimate that I added about 3 tablespoons at a time) and beat until glossy and stiff peaks form. Spoon the mixture onto the circle, and use a spatula to shape the egg white mixture into a circle with decorative sides, if desired.
3. Bake for 1 hour, or until firm to the touch.Turn off the oven and prop the oven door open with a wooden spoon. Allow the pavlova to cool completely in the oven.
4. Make the Whipped Cream: Place the heavy cream, sugar, and vanilla extract in a large bowl and beat on medium-high speed until it holds stiff peaks.

1. Preheat the oven to 350°F/180°C (without fan).
2. Using a standmixer or electric beaters, whisk the egg whites in a large, clean bowl until they have tripled in volume and soft peaks form.
3. Turn the speed down to low and slowly add the caster sugar, one spoon at a time until the sugar is well incorporated. As you add the sugar, the mixture will start to become thick and glossy, and stiff peaks will form when you lift the beaters.
4. Remember to scrape down the sides of the bowl.
