Sear on each side for 2-3 minutes total, then remove to a dish or bowl. Then repeat two more times with the remaining beef and two more tablespoons of oil.
4. Once all of the beef has been seared, add the remaining oil along with onion, carrots, mushrooms, garlic and nutmeg and cook for three minutes, stirring as you go.

Add the ground beef and cook, stirring often and breaking it up as it cooks, until no longer raw but still slightly pink, about 5 minutes. Drain. Allow to slightly cool.
