2. Add chopped apricots, honey, zest of lemon and fresh ginger into a pot and cook over low-medium heat for about 10 minutes or until the apricots start to break up and still have little chunks. If you do not like the texture with little chunks of tender apricots, just cook for a minute or 2 longer until smooth.
3. Allow to cool.Enjoy!

3. Mix water and pectin in small saucepan. Bring to boil on high heat, stirring constantly. Cook and stir 1 min. Add to fruit mixture; stir 3 min. (A few sugar crystals may remain.)
4. Fill containers immediately to within 1/2 inch of tops. Wipe off top edges of containers; immediately cover with lids. Let stand at room temperature 24 hours. Refrigerate up to 3 weeks or freeze up to 1 year. (If frozen, thaw in refrigerator before using.)

4. Once mixture reaches a boil that cannot be stirred down, add sugar, stirring well. Bring back to a rolling boil and boil for 1 minute, continuing to stir.
