2. Pour apple cider on top, then pour in lemon juice. If using the wine, dump in the wine. Refrigerate for at least one hour, up to 8 hours.
3. To serve, pour the sangria and fruit about 2/3 full in a glass. Top with sparkling water and a cinnamon stick.

2. Just before serving, add ice and pour into serving glasses. Top each glass with a splash of carbonated water and garnish with a cinnamon stick. For added fancy, combine a spoonful each of cinnamon and sugar. Dip the rim of your serving glasses into the sangria, then dip it in the cinnamon sugar mix before pouring in the sangria.
