1. Place cored and sliced apples (not peeled) into a large slow cooker or crock-pot.
2. Add apple cider vinegar (or water) and spices. Stir all ingredients together, cover and let it cook for 5-6 hours on low.
3. The liquid will reduce and the apples will be very soft, dark in color and smell heavenly. Turn the slow cooker off and then use an immersion blender to puree the apples until smooth. Another option is to carefully transfer the apples to a blender and blend until completely smooth.
4. Once the apples are pureed, turn the slow cooker on high and heat the apple butter for 1-2 hours, uncovered. This will help it thicken and caramelize.

1. In a large, high sided pot, add all the sugar and cook over medium high heat to make a dry caramel. You can stir a dry caramel. As soon as all the sugar melts, I usually stop stirring. You can break up any clumps of sugar with your spoon. When it hits dark amber add the apple cider, apples and all the spices
2. Cook 1 hour, remove cinnamon stick
3. Immersion blend with a hand blender in the pot or carefully use a standard blender, working in batches. Pass through a fine sieve.
4. Put it back in a high-sided pot and reduce over low heat, stirring frequently, until it runs off a spoon like cold honey. Cool down before putting into jars or can using the appropriate safety precautions.
