1. Spatchcock the chicken. Turn the bird onto its breast and use a pair of heavy duty kitchen shears to cut along either side of the backbone, removing it completely.
2. Then turn the chicken over and press on the sternum to crack it so the bird lays flat. Tuck the wing tips inwards on themselves and spread the legs out so the dark meat gets plenty of exposure to the heat.
3. Pat the bird dry, removing as much moisture as possible, especially from the skin. Starting on the underside, salt the chicken liberally all around.
4. Turn the chicken skin-side-up and sprinkle the skin evenly with granulated garlic and paprika.

1. Put your uncovered frozen dinner on the sheet pan included with your Anova Precision Oven. This will help to contain any messes if your dish bubbles over. For even easier cleanup, line the sheet pan with foil or parchment paper. NOTE: If your frozen meal has a plastic bag you’re supposed to leave on in the microwave or traditional oven, you can remove that. Those serve to help steam the food so it won’t dry out, but cooking in the Anova Precision Oven with full steam will accomplish the same thing. It might get a little browner on top, but when it comes to casseroles and baked pasta dishes, that’s a good thing!
2. Your food may take more or less time, so use the probe to check the internal temperature about 15 or 20 minutes into the cook.
3. Remove your dinner from the oven, let it rest at least five minutes, stir or slice, and enjoy!
